A woodland brunch. Cooked this for me and my buddy Paul J (@this_green_moon) the other day in the woods at Swillington Farm. Fried Burford Brown Eggs on Toasted Sesame and Quinoa Bread with Sautéed Chanterelle and Oyster Mushrooms picked from the woods. They were in the pan within five minutes of collecting them, sautéed in a little butter and thyme leaves with the minimum of shuffling about in the pan and finished with a squeeze of lemon. Ultimate freshness.
